Preheat the oven at 160 deg for 10 mins
Grease two 8 inch round pans.
Sieve madia, baking powder, baking soda and salt – thrice
Beat milkmaid, ghee and sugar till smooth and creamy.
Mix in half milk and half madia mix into the creamed mixture and beat till incorporated.
Add the balance madia mix along with milk, water and essence and mix till incorporated.
Divide the batter into four bowls
In each bowl add the jelly powder and the respective gel color to intensify the color and mix with a spoon.
Using the spoon pour one spoon of each color randomly and keep building it in tin to get the Holi splash effect. Or tie and dye effect.
Bake in the oven at 160 deg for 35 to 45 mins till a toothpick inserted comes out clean. – to avoid top from browning place a empty tray on the top shelf.
Let it cool for 20 mins then demold and cut the sides to show the color.
Stack it and serve plain or with a clean new water gun with rose water in it.
